On Sunday the 8th December at the Russet Room, Brogdale Market Place the home of Spitting Pig Kent we catered for 55 members of the Salvation Army for their Christmas dinner,
They arrived rather earlier than expected but were soon sitting at there tables with drinks and then took part in a Quiz to occupy the time and this explained the early arrive time.
We were working for the Courtyard Restaurant at Brogdale and sub-contracted to do the food and with their waitresses doing the service to table of plated food. I had assigned my Second Chef Steven Bielby to this job, but as the task of the job unfolded, I also stepped in but kept Steven the Head chef as he had done all the organising with the Owner of the Restaurant and he is a lecturer at the K College of Folkestone for all Catering.
Although very testing we managed to get 55 dinners to the table nice and hot and everyone commented on the quality of the food that was served.
We started Serving at 1pm and about 3pm the guests were finally tucking into Mince pies, Coffees, or Teas.
This event showed us that we can even with our outside catering equipment, hog roasting machines and commercial ovens still cater for the Christmas Dinner Style catering event which is more A la Carte.
The Courtyard waitressing team have worked with us on some of our summer events so everything ran really smoothly, the important factor was getting the 3 tables of 18 sat and every ones order of starters and mains confirmed before we started the service.
We got a very big thank you from the owner of the Courtyard Restaurant for all our hard work and we have now decided to work more closely at making the Restaurant and other Brogdale buildings a Wedding Venue for Spitting Pig Kent to use working with the Courtyard management and staff.
